中文摘要:
      姜黄素具有抗氧化、抗肿瘤、降血脂和预防老年痴呆等多种生理功能,然而水溶性差、不稳定、生物利用率低等缺陷限制了其在食品中的应用。利用纳米技术,以天然生物大分子为材料,制备姜黄素的传递载体,可以解决上述问题。本文综合近年来国内外的研究报道,对姜黄素的纳米载体进行分类总结,并对其在食品中的应用前景进行展望。
英文摘要:
      Curcumin has many biological functions such as anti-oxidation, anti-tumor, hypolipidemic and prevent Alzheimer’s disease. However, poor water-soluble and unstable properties, as well as low bioavailability of curcumin limit its application in food. The delivery carriers of curcumin based on biopolymers using nanotechnology could solve the aforementioned problems effectively. The domestic and overseas research reports of curcumin vehicles in recent years were comprehensive reviewed, and the prospects for their applications in food industry were focused in the paper.
