贮藏过程中阿根廷鱿鱼生物胺的变化及产胺菌的分离鉴定

    通过高效液相色谱法(HPLC)测定不同贮藏温度下阿根廷鱿鱼中生物胺含量的变化,确定其主要的特征生物胺,并对其新鲜度进行评价;同时分离和筛选产胺菌,对其进行鉴定。结果表明:阿根廷鱿鱼中产生的主要生物胺为苯乙胺、腐胺、尸胺、酪胺,组胺、精胺和亚精胺在贮藏期间变化不明显。随着贮藏时间的延长,不同贮藏温度下的阿根廷鱿鱼中TBA、TVC指标均不断上升,pH值则先降后升。在25 ℃和4 ℃贮藏条件下分离得到产胺菌A1~A11和B1~B12株,其中分离得到产腐胺菌16株、产尸胺菌16株、产组胺菌14株、产酪胺菌2株。在25 ℃条件下,筛选得到柠檬酸杆菌属(Citrobacter freundii,Citrobacter murliniae,Citrobacter braakii)5株,蜂房哈夫尼亚菌(Hafnia alvei)2株,成团泛菌(Pantoea agglomerans)1株,变形杆菌(Obesumbacterium proteus)1株,克吕沃尔氏菌(Kluyvera cryocrescens)1株,克雷伯氏菌(Klebsiella aerogenes)1株;在4 ℃贮藏条件下,筛选得到肠杆菌属(Enterobacteriaceae bacterium)1株,柠檬酸杆菌属(Citrobacter braakii)1株,克雷伯氏菌属(Klebsiella aerogenes)1株,变形杆菌(Obesumbacterium proteus)3株,哈夫尼菌属(Hafnia alvei,Hafnia alvei sensu,Hafnia paralvei)6株。

    Abstract:

    The changes of biogenic amines in Illexargentinus were determined by high performance liquid chromatography (HPLC) at different storage temperatures. The main characteristics of biogenic amines were determined and their freshness was evaluated. The amine-producing bacteria were isolated and identified. The results showed that the main biogenic amines produced in Illexargentinus were phenethylamine, putrescine, cadaverine and tyramine. Histamine, spermine and spermidine did not change significantly during storage. The TBA and TCA indexes in Illexargentinusat at different storage temperatures with the prolongation of storage time were increasing, while the pH value decreased first and then increased. Amine strains A1-A11 and B1-B12 were isolated under storage conditions of 25 ℃ and 4 ℃, among which 16 strains of saprophyte, 16 strains of cadaverine, 14 strains of histamine and 2 strains of tyramine were isolated. 5 strains (Citrobacter freundii, Citrobacter murliniae, Citrobacter braakii), 2 strains (Hafnia alvei), 1 strain (Pantoea agglomerans), 1 strain (Obesumbacterium proteus), 1 strain (Kluyvera cryocrescens) and 1 strain (Klebsiella aerogenes) were screened under the condition of 25 ℃. 1 strain of Enterobacteriaceae bacterium, 1 strain of Citrobacter braakii, 1 strain of Klebsiella aerogenes, 3 strains of Obesumbacterium proteus, 6 strains (Hafnia alvei, Hafnia alvei sensu, Hafnia paralvei) were screened under the storage condition of 4 ℃.
