    摘要:

    采用超微粉碎技术对脱脂蛋黄粉进行前处理,探究不同粉碎程度对水解蛋黄粉理化和抗氧化性质的影响。结果表明,经超微粉碎处理,脱脂蛋黄粉粒径减至10.87 μm,在减少加酶量的情况下仍能得到较高的可溶性氮回收率(66.23%),制得的水解蛋黄粉具有最好的ABTS和DPPH自由基清除能力。相关性分析表明,分子质量在1~10 ku的肽段与抗氧化能力具有显著的正相关性。经超微粉碎处理的脱脂蛋黄粉较原脱脂蛋黄粉水解速度降低,这与超微粉碎过程中蛋黄蛋白二级结构α-螺旋向β-折叠的转化有关。综合看,超微粉碎能有效提高水解蛋黄粉的得率和抗氧化能力,有利于生产水解蛋黄粉。

    Abstract:

    In this study, superfine grinding technology was used to pretreat defatted egg yolk powder, and the effects of different grinding degrees on the physicochemical and antioxidant properties of egg yolk hydrolysate were explored. The results showed that after the superfine grinding treatment, the particle size of defatted egg yolk powder decreased to 10.87 μm, a high soluble nitrogen recovery rate of 66.23% could be obtained even when the amount of added enzyme was reduced, and it had the best ABTS and DPPH free radical scavenging ability. The correlation analysis showed that peptides with molecular weight of 1-10 ku were positively correlated with antioxidant capacity. In addition, the hydrolysis rate of the defatted egg yolk powder treated by superfine grinding was slower than that of the original defatted egg yolk powder. This phenomenon was related to the transformation of the secondary structure of egg yolk protein from α-helix to β-sheet during the superfine grinding process. On the whole, superfine grinding could effectively improve the yield and antioxidant capacity of egg yolk hydrolysate, which was beneficial to the production of egg yolk hydrolysate.
