Abstract:China has rich marine pelagic fish species and owns numerous processing enterprises. Marine pelagic fishes are the kind of seafood with high protein, high fat and high calorie. During the transportation, storage and processing periods, Marine pelagic fishes are vulnerable to contaminate by amine bacteria which could produce enormous quantities of biogenic amines through decarboxylation. Eating contaminated fishes could easily cause food poisoning, hence biological amines content should be used as an important quality index of fish products, and how to effectively control the biological amines is one key issue in the development of pelagic fish industry. In this paper, the monitoring situation of biological amines was collected and the existing problems were analyzed by visiting and investigating the pelagic fish processing enterprises in the surrounding areas. The control strategies of biological amines in marine pelagic fish products were proposed based on literature reports. The control strategies could provide the guidance for the production and processing of relevant enterprises, and reliable basis for the policy and scientific decision-making of relevant departments.
