Abstract:The present study aims to reveal bacterial diversity changes of modified atmosphere packaging Chinese soft-shelled turtle, so as to provide reference for the preservation. The composition and diversity in bacterial communities in modified atmosphere packaging(50%CO2 / 50%N2,3mL∶1g) Chinese soft-shelled turtle during chilled storage (4 ℃) were investigated,using metagenomic approach. Results indicated that during the storage, the richness of microbial community went up gradually, while the diversity of microbial community incresed at first then decreased significantly; the dominant spoilage bacterias was Shewanella (29.68%). It was proved that modified atmosphere packaging could effectively inhibit the growth of spoilage microorganism (Pseudomonas, Flavobacterium). Modified atmosphere packaging was a good choice for Chinese soft-shelled turtle preservation.
