Abstract:Curcumin has many biological functions such as anti-oxidation, anti-tumor, hypolipidemic and prevent Alzheimer’s disease. However, poor water-soluble and unstable properties, as well as low bioavailability of curcumin limit its application in food. The delivery carriers of curcumin based on biopolymers using nanotechnology could solve the aforementioned problems effectively. The domestic and overseas research reports of curcumin vehicles in recent years were comprehensive reviewed, and the prospects for their applications in food industry were focused in the paper.
