    探究发芽鹰嘴豆匀浆对带鱼鱼糜制品凝胶特性的影响,开发一种低凝胶强度鱼糜制品——鱼肠供老年群体食用。通过单因素实验确定凝胶化条件(温度和时间)对鱼糜凝胶强度的影响,以此为基础对用添加发芽鹰嘴豆匀浆鱼糜制备的鱼肠的持水性、色泽、流变特性、微观结构及消化特性等进行分析。结果表明:当凝胶化条件为35 ℃、40 min时,添加发芽鹰嘴豆匀浆鱼肠的凝胶强度最低,达37.08 g·cm,相较空白对照组降低了37.14%。与空白对照组相比,此条件下制备的鱼肠持水性略高,凝胶中自由水及结合水含量增加(分别增加了22.45%和59.14%),白度值较低,色泽与鹰嘴豆外观相近。流变结果显示其黏弹性降低,属于适合老年群体食用的质地。微观结构对比发现发芽鹰嘴豆组凝胶结构不规则、凝胶性较差。添加匀浆后消化率降低(对照组为61.53%,发芽鹰嘴豆组为45.93%),有利于保持饱腹感,控制血糖水平。挥发性成分分析表明,添加发芽鹰嘴豆匀浆后改变了鱼肠的风味,增加了香气。通过国际吞咽障碍饮食标准测试,制得的低凝胶强度鱼糜制品属IDDSI六级食品。结论:发芽鹰嘴豆匀浆对带鱼鱼糜制品的凝胶强度具有调控作用,本研究为开发鱼糜类老年食品提供了参考。

    Abstract:

    The purpose of this study was to explore the effect of germinated chickpea homogenate on the gel properties of Trichiurus lepturus surimi products, so as to develop a low gel strength surimi product (fish sausage) suitable for the elderly. The effects of gelation conditions (heating temperature and time for a period of time) on the gel intensity of surimi were explored by single-factor experiment. Based on this, some characteristics of fish sausage after adding sprouted chickpea homogenate were analyzed, including water holding capacity, color, rheological characteristics, and microstructure, etc. The results showed that when the gel condition was 35 ℃ and 40 min, the gel strength of the fish sausage added with germinated chickpea homogenate was the lowest, reaching 37.08 g·cm, which was 37.14% lower than that of the fish sausage without the homogenate. Under this condition, the water holding capacity of the fish sausage prepared was slightly higher than that of the fish sausage without the homogenate, the content of free water and bound water in gel increased (22.45% and 59.14%, respectively), the whiteness value was low, and the color was similar to that of chickpea. The rheological results showed that its viscoelasticity was poor and it belonged to a texture suitable for the elderly population to consume. The microstructure comparison found that the gel structure of the germinated chickpea group was irregular and the gel property was poor. After adding homogenate, the digestion rate of fish sausage decreased (61.53% in the control group and 45.93% in the germinated chickpea group), which was beneficial for maintaining satiety and controlling blood sugar levels. The analysis of volatile components showed that the addition of germinated chickpea homogenate changed the flavor of fish sausage and increased their aroma. The low gel strength surimi product was IDDSI Grade VI food after passing the test of the international dietary standard for dysphagia. In conclusion, the germinated chickpea homogenate has a regulatory effect on the gel strength of Trichiurus lepturus surimi products. This study provides a new idea and reference for the development of surimi based elderly food.
