    摘要:

    植物多酚是广泛分布于植物中的具有多元酚结构的复杂次生代谢产物,已被证实具有抗炎、抗氧化、预防心血管疾病、抗癌等多种生理功能。随着大健康观念的深入人心,植物多酚潜在的生理活性被不断挖掘,对其的高效利用已成为食品科学及其相关领域的研究热点之一。然而,多酚普遍水溶性和稳定性较差,导致多酚的生物利用度较低,极大限制了其在食品工业中的应用。这些限制可以通过封装技术来克服,其中,乳液封装体系因制备工艺简单,稳定性良好,可为体系带来特定功能等特点,故具有广阔的应用前景。本文从生物利用度方面综述各封装体系,特别是乳液封装体系对植物多酚消化特性的影响,为植物多酚的高效利用提供理论参考。

    Abstract:

    Plant polyphenols are complex secondary metabolites with polyphenol structure widely distributed in plants, which have been proved to have many physiological functions such as anti-inflammatory, antioxidant, prevention of cardiovascular disease and anticancer. With the popularity of the concept of great health, the potential physiological activities of plant polyphenols have been continuously explored, and the efficient utilization of plant polyphenols has become one of the research hotspots in food science and related fields. However, polyphenols are generally water-soluble and have poor stability, resulting in low bioavailability of polyphenols, which greatly limits their application in the food industry. These limitations can be overcome by packaging technology, among which the emulsion packaging system has a broad application prospect because of its simple preparation process, good stability, and can bring specific functions to the system. In this paper, the effects of various encapsulation systems, especially emulsion encapsulation systems, on the digestion characteristics of plant polyphenols were reviewed from the aspect of bioavailability, which laid a certain theoretical foundation for the efficient utilization of plant polyphenols.
