    摘要:

    为提高嗜酸乳杆菌JYLA-126胃液耐受性及贮藏稳定性,以大豆乳清蛋白(SWP)-海藻酸钠复合体系为壁材,采用内源乳化法构建益生菌微胶囊递送系统。通过单因素实验和响应面试验优化工艺参数,确定最佳制备工艺条件为:海藻酸钠质量分数2%,海藻酸钠与碳酸钙质量比1∶2,海藻酸钠与大豆乳清蛋白质量比1∶1,水油体积比1∶3。该工艺条件下,嗜酸乳杆菌JYLA-126微胶囊的包埋率为72.12%,具有良好的耐酸性和肠溶性,适宜在4 ℃下贮藏。研究结果表明,该微胶囊体系可有效提高嗜酸乳杆菌在胃肠转运中的存活率及长期贮藏稳定性,为开发环境友好型、低成本的益生菌靶向递送系统提供了新策略。

    Abstract:

    In order to improve the gastric fluid tolerance and storage stability of Lactobacillus acidophilus JYLA-126, a probiotic microcapsule delivery system was constructed by endogenous emulsification using soybean whey protein (SWP)-sodium alginate as the composite system as the wall material. The process parameters were optimized by one-way and response surface tests, and the optimal preparation conditions were determined as follows: sodium alginate mass fraction of 2%, sodium alginate to calcium carbonate mass ratio of 1∶2, sodium alginate to soybean whey protein volume ratio of 1∶1, water to oil volume ratio of 1∶3. The embedding rate of Lactobacillus acidophilus JYLA-126 microcapsules under this process condition was 72.12%, and the microcapsules had good acid resistance and enteric stability, and were suitable for storage at 4 ℃. The results showed that the microencapsulation system could effectively improve the survival rate of Lactobacillus acidophilus in gastrointestinal transit and long-term storage stability, which provides a new strategy for the development of environmentally friendly and low-cost probiotic targeted delivery system.
