Effects of Drying Methods on the Quality of Dictyophora rubrovolvata from Yunnan and Guizhou Provinces

    目前市售红托竹荪主要采用热风干燥方式延长贮藏期,易导致竹荪外观皱缩、营养成分流失。本文研究干燥方式对不同产地红托竹荪外观、质构、风味等品质特性的影响,旨在提升红托竹荪经济价值。采用色差计、低场核磁共振成像分析仪、气相色谱-质谱联用仪等研究热风干燥、真空干燥、冷冻干燥方式对红托竹荪色泽、水分分布和风味化合物等品质特性的影响。结果表明,真空干燥与冷冻干燥处理的竹荪结合水分布无显著差异(P>0.05)。真空干燥后竹荪的褐变程度较热风干燥显著升高,滇、黔两地竹荪分别升高了1.60倍和1.43倍。冷冻干燥显著抑制了竹荪褐变,滇、黔两地竹荪冻干后褐变指数仅为热风干燥的0.64倍和0.71倍。质构分析显示,冷冻干燥保留了竹荪本身的硬度和内聚性。值得注意的是,冷冻干燥后竹荪的风味层次较热风干燥与真空干燥更加丰富,且冷冻干燥处理保留了苯乙醇和2,3-丁二酮等竹荪特有的风味化合物。结论:冷冻干燥的红托竹荪的褐变程度、质构、风味等性质均优于热风干燥与真空干燥,且产地对竹荪品质特性的影响相对较小。

    Abstract:

    Dictyophora rubrovolvata is mainly dried by hot air to extend shelf life, while hot-air drying causes shrinkage in appearance and nutrient loss. Therefore, the effects of drying methods on the appearance, texture, flavor and other quality characteristics of D. rubrovolvata from different habitats were systematically studied in this paper, which aimed to enhance the economic value of D. rubrovolvata. The color, water distribution and flavor compounds of vacuum-dried and freeze-dried D. rubrovolvata were investigated using the colorimeter, low-field nuclear magnetic resonance and gas chromatography mass spectrometry. The results showed that no significant difference was observed in the distribution of bound water among hot-air, vacuum and freeze-dried D. rubrovolvata (P>0.05). The browning index of vacuum dried D. rubrovolvata was significantly higher than that of hot-air drying, with increasing of 1.60-fold and 1.43-fold for Yunnan and Guizhou D. rubrovolvata, respectively. In contrast, freeze-drying significantly inhibited the browning of D. rubrovolvata, as the browning index of Yunnan and Guizhou D. rubrovolvata was 0.64-fold and 0.71-fold compared with hot-air dried samples, respectively. Texture profile analysis indicated that freeze-drying preserved the original hardness and cohesiveness of the D. rubrovolvata. Notably, the freeze-dried D. rubrovolvata exhibited a richer flavor profile compared with those of hot-air drying and vacuum drying. Furthermore, freeze drying preserved phenylethyl alcohol, 2,3-butanedione, and other characteristic flavor compounds of D. rubrovolvata. In conclusion, freeze drying is an effective method for treating D. rubrovolvata, which includes inhibiting the browning, and preserving the texture of the fungus. It is remarkable that the origin of D. rubrovolvata showed minimal impact on the quality of the fungus.
