    摘要:

    开发新蛋白食品是解决优质蛋白缺乏问题的有效途径,对缓解农业资源压力、保障粮食安全和践行“大食物观”具有战略意义。新蛋白食品一般具有特殊风味,与人类的常规饮食风味差别较大。采用适宜的加工技术提升风味品质,是新蛋白食品为更多消费者所接受的重要前提。本文梳理了植物基蛋白、微生物蛋白、细胞培养肉、昆虫蛋白及藻类蛋白五大类新蛋白食品的应用现状、风味特征、风味设计与加工调控等方面的内容,从原料预处理、加工技术等层面,总结新蛋白食品风味调控的策略与手段。分析了当前新蛋白食品风味研究面临的挑战,包括风味物质基础与呈味机制、健康效应分子基础不明晰,风味设计系统性不强以及风味前体物质定向转化技术瓶颈等,并对未来发展趋势进行展望:新蛋白食品风味研究面临从“不良风味去除”向“风味创新”的战略转型,聚焦绿色智能加工、个性化营养定制,通过构建“化学结构-感官属性-消费者偏好”协同理论体系,可推动食品产业向健康化、智能化、绿色化方向高质量发展。

    Abstract:

    The development of novel protein foods is an effective approach to addressing the shortage of high-quality protein. They hold strategic significance for alleviating agricultural resource pressure, ensuring food security, and practicing the `all-encompassing approach to food'. Novel protein foods typically possess distinctive flavors that differ significantly from those of conventional dietary flavors. Employing appropriate processing technologies to enhance flavor quality is a crucial prerequisite for gaining wider consumer acceptance of novel protein foods. This paper summarized the application status, flavor characteristics, flavor design, and processing regulation of five major types of novel protein foods, including plant-based protein, microbial protein, cell-cultured meat, insect protein, and algal protein. It concluded the strategies and technical methods for flavor regulation of novel protein foods from the aspects of raw material pretreatment and processing technology. The challenge of flavor research on novel protein foods were analyzed, including unclear flavor substance basis and taste presentation mechanisms, lack of molecular basis for health effects, insufficient systematicness in flavor design, and technical bottlenecks in the directional transformation of flavor precursor substances. It also provides a prospect of future development trends: Flavor research on novel protein foods needs to achieve a strategic transformation from `off-flavor removal' to `flavor innovation', focus on green intelligent processing and personalized nutrition customization, and promotes the high-quality development of the food industry toward health, intelligence, and greening by constructing a collaborative theoretical system of `chemical structure-sensory attributes-consumer preferences'.
