    Abstract:

Objective: A common phenomenon in Zhacai during pickling process was the occurrence of white biofilm on Zhacai's surface. Currently, little knowledge was obtained about the microorganisms of white biofilm. This study aimed to analyze and elucidate its microbial community structure, providing reference data for identifying and controlling harmful microorganisms and improving the safety of Zhacai. Methods: The bacterial 16S rRNA gene and fungal ITS1 gene of white biofilm samples were sequenced by PacBio SMRT and Illumina MiSeq sequencing platform respectively. Results: There were multiple genera of bacteria and fungi present in the white biofilm samples. The main genera of bacteria identified included Delftia, Comamonas, Stenorophomonas and Brevundimonas, while the main genera of fungi included Aspergillus, Cladosporium, Debaryomyces, Penicillium, Wickerhamomyces and Kazachstania. Conclusions: The results of this study could provide reference for the prevention and control of microorganisms in Zhacai.
