Abstract:To address the issues of poor quality, severe nutrient loss, and undesirable flavor in shepherd's purse powder treated solely by microwave drying, this study investigated the effects of microwave-far infrared drying with different moisture conversion points (80%, 70%, 60%, 50%, 40%) on the drying characteristics, color, processing properties, active components, and flavor characteristics of shepherd's purse powder. The results showed that compared with single microwave drying (S0), microwave-far infrared drying prolonged the drying time and reduced the drying rate 64.41%-92.88%, while increasing the a* value and decreasing the b* value of the shepherd's purse powder. The hygroscopicity, water holding capacity, and oil holding capacity were significantly (P < 0.05) improved, and the loss rates of total chlorophyll, total flavonoids, total phenols, and vitamin C were significantly (P < 0.05) reduced. In shepherd's purse samples treated by microwave-far infrared drying at the moisture conversion point, immobile water was the predominant water state. When the moisture conversion point was 60%, the reduction rates of total chlorophyll, total flavonoids, total phenols, and vitamin C in the shepherd's purse powder were 66.61%, 30.50%, 11.23%, and 71.29% of those in S0, respectively. Although microwave-far infrared drying altered the types and contents of volatile compounds in shepherd's purse powder, the overall flavor characteristics of the combined-dried shepherd's purse powder at different moisture conversion points showed no significant differences. In conclusion, microwave-far infrared drying could effectively enhance the hygroscopicity, water holding capacity, and oil holding capacity of shepherd's purse powder, reduce the loss of active components, and improve its flavor quality. In general, microwave-far infrared drying with a moisture conversion point of 60% yielded shepherd's purse powder with the best quality. These findings provide a technical reference for quality improvement and product development of shepherd's purse powder.
