    Abstract:

    As a natural bioactive substance, mulberry anthocyanins are rich in polyphenolic components, predominantly cyanidin-3-O-glucoside and cyanidin-3-O-rutinoside, which exhibit multiple physiological activities including potent antioxidant effects, suppression of inflammatory responses, inhibition of cancer cell proliferation, and improvement of glucose-lipid metabolism disorders, demonstrating diverse health-promoting effects. Currently, it has been widely applied in fields such as the food industry, pharmaceuticals, cosmetics, and animal husbandry, serving as natural colorants, functional additives, anti-aging ingredients, and other applications. This paper systematically reviewed the chemical properties, absorption-metabolism pathways, biological functions, and cross-industrial application advances of mulberry anthocyanins, providing a theoretical basis for their further development and value-added utilization.
