1. I/We confirm that the paper is an original research work (except the literature review), contains nothing that is forged or deceptive, and is not a plagiarized version of some other published work. There are no impediments to publication of this paper with respect to state secrets or infringement on intellectual property rights. The author(s) shall take all responsibility if any problem associated with the aforementioned matters occurs.
2. The paper is not under consideration for publication elsewhere and has not received prior publication in any other journal or media or in any language. The corresponding author has read the paper, has contributed significantly to the work, and takes responsibility for the future publication of the paper. All the authors have carefully read the paper and have agreed with the contents and conclusions in it. The organizations where I/we work have clearly acknowledge the contents of the paper, and the order of authors and their organizations listed has been approved by all of us. The paper is written with knowledge of the submission tutorial and writing requirements of the journal, and has been carefully checked for accuracy before submission.
3. I/We understand that the order of authors should not be changed and no addition or deletion of authors is allowed once the paper is ready for the review process. If the paper is withdrawn for any reason, the first author and/or the corresponding author should notify the Editorial Office of the journal in writing.
4. Similar related domestic and foreign research work is presented in the paper with clearly indicated sources of citations and in the form of a list in the references section. The organizations and individuals that provided scientific support and consultation for this paper are listed in the acknowledgement section.
5. If the paper is accepted for publication, I/we agree to pay the journal a processing fee of RMB200 and the corresponding publication fee, and to receive a lump-sum payment (including copyright royalty) for the paper.
6. Copyright Licensing: I/We agree that the copyright of the paper (including but not limited to the rights of compilation (part or all of the paper), reproduction, translation, information network dissemination, exhibition, distribution, etc.) is licensed to Journal of Chinese Institute of Food Science and Technology worldwide after the paper is published in the journal. The license period should coincide with the copyright term of the paper. The journal has the right to grant permission for inclusion of the paper in literature search systems or databases. No part of the paper may be compiled, reproduced, or published in any form without the written permission of Journal of Chinese Institute of Food Science and Technology. After the paper is published, the author/authors should have the right to use it for exhibition, compilation or display purposes on his/her or their own website.

1. Preliminary Review
The editor is in charge of preliminary review. Papers that are not covered in the scope of the journal’s call for papers or that have clear defects will be rejected at the preliminary review stage.
2. External Review
Papers that have passed the preliminary review of the editor are submitted to the members of the Editorial Board and/or other experts in the field for review. At least two experts in the field are invited to review the paper, and original research will be reviewed by an additional methodologist. The journal adopts a double-blind review policy, which means that neither the reviewer nor the author knows each other’s information.
3. Final Review
The editor-in-chief makes the final decision on the publication of the paper. If a paper is to be accepted, the editor will initiate academic misconduct detection on Chinese National Knowledge Infrastructure (CNKI) or Wanfang Data Platform. A total copy ratio less than 15% and a maximum copy ratio of a single paper less than 10% will be deemed as being acceptable; otherwise, the paper will be considered as academic misconduct. A paper that has been considered as academic misconduct will be rejected by the Editorial Office, and if the author is found to commit academic misconduct for the first time, he or she will receive a warning from the Editorial Office; if the author is found to commit academic misconduct more than once, he/she will be included in the academic misconduct blacklist, and the Editorial Office will never accept his/her submission.
Instructions for Reviewers
Peer review helps improve problems in the paper and enhance the quality of the journal. Reviewers should keep information about the papers they review confidential.
If you believe that you have a direct conflict of interest with the reviewed paper or with the author/related organization, please notify the Editorial Office and abstain from the review work.
During the review process, please fill in all the information required on the review form, keep the revision marks in the reviewed paper, and upload it to the review system. The journal highly values the comments of reviewers and asks for objective, fair and valuable opinions on the reviewed paper.
Tutorial on Online Review for Reviewers
As we did for our past reviewers, we generate a unified account and password and email them to each reviewer. When a paper is ready for review, it will be emailed to the reviewer, and the reviewer can click on the link in the email to review the paper.
After receiving the email, the reviewer can click on the link to review the paper or log in the system and click on the paper to be reviewed, provide the review comments online, download the paper, and consult the relevant literature online (search on www.alljournals.cn is supported) at the same time. After the review is completed, the reviewer can provide his or her comments online and upload any relevant attachment!
The reviewed paper can be viewed in the list of reviewed papers.
Personal information can be updated online at any time, so that we can mail the remuneration to the reviewer using the correct address.
